A Simple Summer Make: Try this Chocolate Berry Cake
Summer is here, almost here, definitely here in the south.The days are long, bright and long, still not long enough. No more coats, no more shivering, all replaced with bright sunlight. The beach is calling, our grills are hot, and suddenly the world is all right. But who has time, to slave inside, over sweets and treats and all that’s nice. Go outside, be outside, escape the kitchen and its plight. But I want cake, you want cake, so who oh who must we sacrifice? Have no fear, summer is here, so this cake will surely be a cinch. A little of this, a little of that, I promise you it can be made in a pinch.
Contrived and forced, this poem may be. Semantics I say, and you’ll soon see. Have no fear though. Did I mention I know how to row? Ok so that is random I must admit. It’s okay though this cake is so worth it. Did I mention I love to bake and the color blue? So, let’s have our cake and eat it too! Can I squeeze in just one more rhyme? Of course I can because alas it’s summer time.
Enough with this summer time frivolity, let’s get down to some serious business. First you must find your favorite chocolate cake recipe, that one that is oh so very delicious. If it comes from a box no one will know, believe it or not people like those best some studies show. Now simply pop it in the oven and let it bake. While you wait why not take a dip in the lake. Once it’s done its time for the icing. I say go with a cream cheese frosting. First its cake and then lots of frosting. Repeat this step and soon your mouth will be dancing. Last but not least we must add the berries, lots and lots of them to please the fairies. In case you can’t read jumbled up rhyme, here are some instructions written out this time.
Step One is quite fun. Bake your favorite Chocolate cake. Any will do so long as its not made of plastic and fake.

Step Two is nothing new. Let that cake of yours cool. If you’ve got it, now’s the time to jump into your nice cold pool.
Step Three makes me go, “wee!” Make some yummy cream cheese icing. This part is quite enticing.
Need a recipe? This one is a breeze. First cream 1/2 cup butter and 16 oz cream cheese. After that add four cups powdered sugar and mix well please.
Step Four is kitchen lore. Time to assemble each delicious layer. Hmm I wonder if this would be a favorite of John Mayer. First its cake, then some icing. Next is more cake and yet more icing. On top of all that, is a layer of berries, phat!
Step Five is jive. It’s time to eat! But please, do not use your feet.
I guess I will say adieu and until next time. Will I ever again post in rhyme? Yeah, probably not for this was a chore. The cake though is quite simple. It can be done in four steps and no more. It is super easy and fun to make. It will even bring out a stern man’s dimple. So let’s celebrate summer with this cake. Chocolate and berries and cream cheese icing. It so much cooler than those tools capable of slicing and dicing. Serve it with lunch or after dinner. Either way it’s a winner. I even had it for breakfast one day. That might have been my best ever day.
It reminds me of summer, of times so bright. Rich and sweet it is just right. Let’s celebrate each long day and short night. For summer is here just once and will soon pass at the speed of light. Its okay though for we have cake. Delicious, wonderful, summertime cake. So easy to bake. Not a trick required to make.

Hi! I’ve made this cake several times now, but you used to have a different cream cheese recipe with it. It had heavy cream added to it at the end. Unfortunately I never printed it out :(
